You don’t have to make your own server (unless you really want to!). Just start a community on a server you like.
The one catch is that others can start a community of the same name and/or interest on another server and that gets a little confusing because then there are two, of course.
I wish that communities could “federate” with each other from different instances but then that raises a bunch of logistics issues about how this is moderated, how is this presented to the users, etc.

Hacking a signal server should yield zero useful results. Messages are encrypted on the phone before being sent. Signal servers only ever receive and retransmit encrypted blobs, never the plaintext. They, by design, do not have the keys to decrypt those messages. There might be metadata about who messages who and when, but I’m not 100% familiar with that part of it.
Now, if you pwn the phone, on the other hand, you can record the display and log the keystrokes.

It doesn’t. All it “knows” is that it has trained on data that makes that claim in the text (ie people’s tweets) and that, statistically, that’s the answer you are looking for.
All it does is take a given set of inputs, and calculate the most statistically likely response. That’s it. It doesn’t “think”. It just spews.

If you are really looking for hassle-free this is it. LetsEncrypt root certificates are already trusted by most devices so when your friends come over and wanna control the media library or whatever you don’t need to install your locally hosted CA’s self-signed certificates on their phone.
Also certbot and a cron or systemd timer is all you need; people have rolled all these fancy solutions but I say keep it simple.
