Fallout 4. The amount of world exploration and itty bitty stuffs almost makes me lost myself in exploration, even though the story can be really short depending how you progress the content. On my first playthrough, I clocked at ~90hrs of play time and only just passed the 1/4 of story progression just because I sucked in sidequest and exploration.
Never thought I enjoyed the base building and assisting settlements aspects, Bethesda did great job on Visual storytelling speaking as Interplay/Obsidian Fallout fan.
Another case is STALKER Anomaly mod which can gives you theoritical endless playtime as long as you creative to build your own CYOA Stalker story. Though I don’t recommend Anomaly if you’re looking for the STALKER lore (as they’re fan project) and should be treated as post-vanilla playthrough.
If you’re okay with demolition derby stuff, FlatOut 2, Ultimate Carnage, and also Wreckfest is decent arcade racer. FlatOut minigames also fun for couch play with 2-4 people.
Wrecking competitor is fun and you can set the difficulty as you wish.

EDIT: Checked steam, they also added achievements for AC Revelations. If other Ezio saga and AC Rogue get achivements too it’d be real treat as holiday is coming to motivate people play the game again🤔
Seconding to emulation, for open world RPG you may find a lot of them on older consoles like pre-Gen 7 consoles (PS3/X360). To OP, assuming emlation is compliant with law on your country, older games are great too if you don’t mind delving pre-2010s games.

Imo what I like from this series (especially on the main line series) compared to the other JRPG games is that the mythology portrayal, the mature themes and the battle of “Law vs Chaos” is that great and doesn’t shy away from source material. I couldn’t explained it myself but it is just something different than your average JRPG.
Literally in one of the mainline game, you have to battle YHVH
Oh and Megami Tensei almost always has banger OST if you all never played them.

For games, you’d rather use game repacks as they sometime provide smaller package for downloading. The most common one are dodi, fitgirls, though other repacker like el amigos, KaOs krew, Mr Dj also available. If you don’t mind ddl, cs-rin.ru and torrminatorr also available.
Avoid IGG-Games they have shady history in case you use public tracker.

Nexus mods isn’t shady, they inform user regarding data breach. They provide mods and have been serving mods ever since pre 2010 I believe (registered myself on that site back in 2014 ish).
Maybe slightly off-topic, I recommend to use Viva New Vegas guide as based on my testing the game is more stable and suitable base for modding up your New Vegas install, however also check out every mods you are going to install especially older mods pre-2018 (for me) as they sometime aren’t optimized which may makes unstable issue with the game. Hope you enjoy the New Vegas!
Nice idea but unfortunately good luck convincing everyone to collaborate into single super-game and integrate each “X simulator” as DLC assuming everyone also adhere guideline and consistent
